Composition of Fresh Seasonal Vegetables

Salad with colorful vegetables cut in different pieces, proposed by the Nutritionist Dr. Paola Proietti Cesaretti by thewealthyspoon

This mix of fresh seasonal vegetables is pleasant to the eyes and to the palate as well. Let’s see how it is possible to achieve so much from simple ingredients.

In order to make more attractive a simple salad, I have cut the vegetables in different ways.

The variety of colors, the different shapes and the layout on the dish make the salad more pleasing to the eye, which is reckoned to be one of the senses strong in stimulating the appetite.

The method of cutting allows also to achieve different consistencies among the vegetables, resulting in a mix very pleasant on the palate.

As condiment I have used a simple vinaigrette made with cider vinegar, extra virgin olive oil, whole sea salt and a a handful of basil leaves.

Tips

If you would like to reduce the amount of condiment for a stricter nutritional profile, then put the emulsion of oil and vinegar into a spray bottle for food use. Then, spray the condiment over the salad.
