Celiac Disease

Celiac disease is a disease characterized by an auto-immune reaction to gluten that leads to atrophy of the intestinal villi with malabsorption.

The increase in today’s intolerance is due to the type of grain sold for food. This grain has a better yield than the previous types, but a greater quantity of gluten passing from a percentage content of 3% to about 14%.

Celiac disease is not caused exclusively by gluten, that is by the environmental factor, but also by some genetic factors that can be discovered with DNA tests that are easy and painless to perform.

Those with celiac disease have the only option to cure gluten. Failure to comply with this one rule advances the disease which could lead to oncological problems and malnutrition.
