Triglycerides

Triglycerides or lipids are compounds of glycerin and fatty acids. They are insoluble in water, have a specific gravity less than one and leave a persistent translucent stain on the paper.

Simple and complex lipids belong to this category, but they can also be divided into lipids of animal origin and lipids of vegetable origin.

Simple lipids are made up of fats (which are solid lipids at room temperature) and oils (which are liquid lipids at room temperature). Their fundamental function is the energy one and from this point of view they constitute the most caloric compounds.
